Chef Brian Heddlesten
Brian Heddlesten discovered his love for cooking at the age of 13 when he picked up a baking cookbook and decided on impulse that he wanted homemade bread that day. Over the next few years he made his way through every cookbook and recipe card his parents owned. Thirty years later, after spending time in restaurants and healthcare, Brian moved to Montana and took a position as Executive Chef for Campus Dining at the University of Montana. He has spent the last three years promoting food safety initiatives across campus, creating a Garden Dinner series, and educating students on global cuisine. At home he plays at Indian, Thai, and South American cuisine and still bakes too much bread.
